Boudin BlancWhether plain or flavoured with herbs, mushrooms or truffles, boudin blanc or white pudding sausage is a refined starter for festive menus.

The Christmas meal in the Middle Ages used to start with a thick soup made from milk, the white of the bread, fat or bacon. Gradually, over time, the soup was served in a sausage casing and the boudin blanc was born.

Comté is a so-called "large-size" cheese that dates back to the 12th century, to a time when peasants had to come up with collective solutions to survive the harsh winters. By pooling their milk reserves to make this cheese that keeps well, they formed cooperative cheese dairies.

Viburnum or Guelder Rose

ViburnumThere are over a hundred and twenty varieties of these plants, all named Virburnum.

The Roman name viburnum came from the Latin viere meaning to bind or plait. The branches of these shrubs were used for rough binding and the very straight shoots were made to make arrow shafts (a specimen was found in the quiver of the prehistoric hunter called Otzi who was discovered in the Dolomites in 1991). Viburnum is also called guelder rose, cramp bark, snowball tree, etc.
