
Veterinary Services controls at Rungis Market
All actors involved in the production, processing, storage and sale of animal or animal-origin foodstuffs are subject to inspection by veterinary services, with two specialized teams in particular working exclusively at Rungis Market.
The Seafood pavilion (A4) and fish platforms are controlled by a team of 5 people, on night duty all year round.
The pavilions for meat (V1P, V1G, V1T), dairy and other products are monitored by a team of 12 people, 3 of whom work at night, while the other 9 are present from 4.15 am to 12 noon.
Daily inspections are carried out to check working conditions: maintenance and cleanliness of premises and equipment, compliance with hygiene rules (work clothes, hand hygiene, product handling, etc.).
Special care is given to controlling chilled-chain compliance at all stages in the product lifecycle: production, storage, marketing, loading and unloading, transportation. Shelf life, labelling conformity, traceability and, of course, the foods’ sanitary quality, are also closely monitored. Samples are regularly taken for analysis.
In case of health warning, these teams ensure that professionals implement the measures to withdraw and destroy the products in question.
Many controls are also conducted on foodstuffs coming from the European Union and on products intended for export to other countries.
A specialized team monitors the conformity of the transportation meansfor foodstuffs (refrigerated, insulated or other vehicles), and hygiene conditions in transit. Lastly, another team is responsible for controlling restaurants at the Market .
